ELAZIĞ YÖRESİNDE YETİŞTİRİLEN ÜZÜMLERDEKİ VE ÜZÜM ÜRÜNLERİNDEKİ POLİFENOLLERİN HPLC-DAD İLE TAYİNİ

Abstract

Bu çalışmada, Elazığ yöresinde yetiştirilen Öküzgözü, Boğazkere, Ağın kırmızısı, Ağın Beyazı ve Şilfoni üzüm türleri ile üzümden katkısız şekilde elde edilen Pestil ve Pekmez ürünlerindeki bazı fenolik asit ve flavonoidlerin tayininin yapılması amaçlandı. Bu amaçla Öküzgözü ve Boğazkere Koruk köyü/Elazığ, Ağın beyazı ve Ağın kırmızısı Ağın/Elazığ, Şilfoni Hoş köyü/Elazığ, Pestil ve Pekmez ise Koruk köyü/Elazığ yörelerinde temin edildi. Çalışmamızda HPLC kullanılarak üzüm ve üzm ürülerindeki gallik asit, kafeik asit, vanilik asit, ferulik asit, hidrosinnamik asit, rosmanirik asit, katesin, rutin, mirisetin, resveratrol, quersetin tayin edildi. Analizler sonucunda, Öküzgözü üzümünde, en yüksek düzeyde resveratrol (2.17±0,20 µg/g), en düşük düzeyde ferulik asit (0.32±0,02 µg/g), Boğazkere üzümünde en yüksek düzeyde (0,98±0,07 µg/g), en düşük düzeyde ferulik asit (0,17±0,01 µg/g) Şilfoni üzümünde en yüksek düzeyde resveratrol (1,09±0,08 µg/g) en düşük düzeyde ferulik asit (0,12±0,01 µg/g ), Ağın kırmızısı üzümünde en yüksek gallik asit (0,61±0,05 µg/g ) en düşük düzeyde hidrosinnamik asit (0,11±0,01 µg/g), Ağın beyazı üzümünde en yüksek düzeyde gallik asit (0,81±0,06 µg/g), en düşük düzeyde resveratrol (0,22±0,01 µg/g), Pestil ürünününde en yüksek düzeyde gallik asit (0,21±0,01 µg/g), en düşük düzeyde rutin (0,06±0,005 µg/g), Pekmez ürününde ise en yüksek düzeyde rutin (3.65±0,35µg/g) en düşük düzeyde quersetin (1,06±0,09 µg/g) olarak bulunmuştur.

In this study, it was aimed to determine the phenolic acids and flavonoids in the Pestil and Molasses products obtained from the grape varieties of Öküzgözü, Boğazkere, Ağın red, Ağın White and Şilfoni grapes grown in Elazığ region. For this purpose, Öküzgözü and Boğazkere Koruk village / Elazığ, Ağın white and Ağın red Ağın / Elazığ, Silfoni Hoş village / Elazığ, Pestil and Pekmez were provided in Koruk village / Elazığ regions. In our study, by using HPLC were determined the gallic acid, caffeic acid, vanilic acid, ferulic acid, hydrosynnamic acid, rosmaniric acid, catesin, routine, myricetin, resveratrol, quersetin in grape and grape products.
